This is a salad of my childhood, Oumie and my mom used to make it for us. It is certainly not a healthy one, but it is full of sweet, fruity South African flavours. We are having this salad at our wedding... it is unusual but tasty. It is usually made with raisins, but I have made this with dates (based on our wedding caterers recipe... which is sooooo good!). It is good as a side at a braai, but could be a good side with any meat dish or as part of a meal of many smaller dishes...
Curried Banana Salad (Serves 4)
1 level Tbsp Mild Curry Powder
150ml Fresh Cream
50g Dates, chopped
1 Tbsp Apricot Jam
1 Lemon, to stop the banana from discolouring
Slice the bananas and squeeze the lemon juice over them to stop them discolouring.
Stir the dates in with the bananas.
Mix the cream, jam and chilli powder in a bowl and stir through the bananas.
The jam has some sort of reaction with the cream and makes it thicken very fast, so you may have to thin the salad with some milk.
Stir as a side to some meat or as part of a braai.
