Yellow Rice
This is a lovely flavourful rice made with raisins, sugar and spices, that is commonly served as a side with bobotie, meat roasts, pies and curry's. It is also known as Borrie Rys (Afrikaans for turmeric rice) or Funeral Rice because in both the Malay and Dutch communities, it was served at the meals after funerals. The idea of colouring rice with turmeric was introduced to South Africa by Indian immigrants.
Yellow Rice Recipe - Serves 6
Ingredients:
2 Cups Basmati Rice
1 Tbsp Butter
1 tsp Salt
1 Heaped Tbsp Sugar
1 Stick or 1 tsp Ground Cinnamon
6 Cardamom Pods, Shelled and Seeds Crushed
1 level tsp Turmeric
5 Tbsp Raisins
Method:
Put all the ingredients into a large pan with 3 cups of water. Heat until the butter is melted, cover and leave to simmer for 10 mins without lifting the lid, until most of the water has evaporated. Take off the heat and allow to steam for a further 5 mins. Fluff with a fork and serve.
Serve as a side with bobotie, any roast meats, pies or curries.
